My boyfriend’s sister baked these for us on Sunday night- sweet potato brownies! I know- sounds pretty gross, but they were the most delicious things I’ve eaten all year, and less terrible for you than the regular chocolate fudge kind.
If any of you want the recipe, here it is..
(Makes 12 small-ish brownies)4 tablespoons melted cacao butter or regular butter/margarine2/3 cup cocoa powder ½ cup whole-wheat flour1 teaspoon of nutmeg1 teaspoon of cinnamon¼ teaspoon baking powder¼ teaspoon salt1/8 teaspoon cayenne powder (optional)1/2 cup of brown sugar1 large sweet potato, peeled1 tablespoon vanilla extractSlice sweet potato and steam it until very soft. Mash it well with a fork or potato masher. Preheat oven to 350 degrees. In a small pan over very low heat melt the butter/margarine. Remove from heat and stir in cocoa powder. Set aside. In a bowl sift together flour, baking powder, cinnamon, nutmeg and salt. Stir in sugar and sweet potato puree. Add vanilla to cocoa mixture and then add cocoa mixture to flour mixture and stir well. Spoon the mixture into an 8-inch lightly greased square pan. Smooth the top and bake for about 20 minutes or until an inserted knife emerges with just a few soft crumbs. Allow to cool and serve.

I was at target with my 4 young kids.

We saw a girl in a wheelchair with down syndrome. I was worried about them making a rude comment because they’re so young.

But my 4 year old son went up to her, kissed her on the cheek, and said “You’re so pretty, are you a princess?”

Her mom cried. Noah, you GMH.

and I cry.

This is beautiful.
